Role Overview
We are looking for a talented Sous Chef with a strong continental cuisine background. The Sous Chef will be responsible for running the daily kitchen, ensuring that recipes are followed with precision, hygiene standards are maintained, and the output reflects our premium brand ethos. This role requires someone who is detail-oriented, disciplined, and experienced in working in modern, high-performance kitchens.
Key Responsibilities
1. Continental & Modern Cuisine Preparation
- Lead production of salads, sandwiches, bowls, dressings, and sides with an international/continental focus.
- Execute recipes with precision, ensuring portion control and consistent quality.
- Stay updated on global flavor trends and contribute ideas for menu innovation.
2. Kitchen Operations & Quality Control
- Supervise daily mise en place, hot/cold prep, and final assembly/packaging.
- Ensure plating/packaging reflects premium continental standards.
- Monitor taste, texture, and freshness at every stage.
3. Hygiene & Food Safety
- Uphold HACCP and FSSAI standards for cleanliness, food handling, and storage.
- Maintain FIFO inventory management and reduce wastage.
4. Team Management & Training
- Train and guide commis/junior cooks on cutting techniques, dressings, sauces, and presentation.
- Foster discipline, speed, and teamwork in the kitchen.
5. Vendor & Stock Coordination
- Track ingredient usage and coordinate with vendors for high-quality produce, proteins, and imported items.
- Work with management to plan procurement and cost control.
Ideal Candidate Profile
- Education: Diploma/Degree in Culinary Arts or Hotel Management (IHMs or reputed hospitality schools preferred).
- Experience: 2–4 years as a CDP/Sous Chef in continental kitchens of premium hotels, cafés, or modern restaurants.
- Skills & Qualities:
- Strong base in continental cuisine (salads, grills, sandwiches, cold kitchen).
- Excellent knife skills and speed in a high-volume environment.
- Eye for detail, presentation, and premium brand standards.
- Calm under pressure, with leadership skills to manage a small team.
- Good communication in English + Hindi/Punjabi.
