A position in a professional kitchen involves working as part of a team to prepare and present high-quality food according to standard procedures and recipes.

The role participates in product development, ensuring the smooth operation of the kitchen and maintaining a high level of customer satisfaction.

Responsibilities include:

  • Preparing food for guests efficiently, economically, and hygienically as per standard recipes and procedures.
  • Assisting the sous chef in the day-to-day operation of the kitchen and maintaining a high standard of food preparation and presentation.
  • Planning, preparing and implementing high-quality food and beverage products and settings in all areas and restaurants.
  • Working seamlessly with recipes, standards and plating guides.
  • Maintaining cleanliness and hygiene according to safe and sound procedures and established FSMS standards.
  • Maintaining all HACCP aspects within the hotel operation.
  • Using all equipment, tools and machines appropriately.
  • Participating in off-site events when required.
  • Completing tasks and jobs outside of the kitchen area when requested.
  • Assisting in inventory taking.
  • Knowledgeable of hotel occupancy, events, forecasts and achievements.
  • Preparing menus as requested.
  • Collaborating with the Stewarding department to ensure high levels of cleanliness and low levels of lost and breakages.
  • Effectively responding to every guest's requests.
  • Learning and adapting to changes.
  • Maintaining at all times a professional and positive attitude towards team members and supervisors.
  • Adhering to established hotel rules and team member handbook, ensuring all team members under your supervision do so as well for the department to operate smoothly.
  • Coordinating, organizing and participating in all production pertaining to the kitchen.
  • Checking and following up on ingredients for ala carte menus, daily menus, and seasonal specials, maintaining the standards of pre-set recipes, portion control and costing at all times.
  • Monitoring food quality and quantity to ensure the most economical usage of ingredients.
  • Checking that the quality of food prepared by team members meets the required standard and making necessary adjustments.
  • Monitoring overall food operation and ensuring that food items are being prepared in a timely and correct manner.
  • Understanding, practicing and promoting teamwork to achieve missions, goals, and overall departmental standards.

This role requires strong communication and time management skills, as well as the ability to work effectively in a fast-paced environment.
