
Culinary Team Member

The Chef de Partie will play a pivotal role in upholding the Gold Standards of our esteemed organization every day.
Key Responsibilities:- Ensure adherence to strict sanitation and health regulations, collaborating closely with the Chef to review assignments, anticipating business levels and changes.
- Prepare ingredients for cooking, including portioning, chopping, and storing food, ready for service.
- Continuously prepare work between meal services, preparing and cooking food according to recipes, quality standards, presentation standards, and food preparation checklist.
- Monitor food quality while preparing food, weighing, measuring, and mixing ingredients according to recipes or personal judgment.
- Test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils.
- Anticipate and communicate any assistance needed during busy periods.
- Maintain awareness of food and labor costs, monitoring food levels to minimize waste and maintain controls to meet forecasted food costs.
- Direct and assist Stewards to maximize clean-up efficiency.
- Provide innovative ideas to run the department in the absence of the Chef and Sous Chef.
