Job Summary:

Accor Hotel is seeking a highly skilled Culinary Operations Manager to join our team. As a key member of our culinary department, you will be responsible for ensuring the efficient and profitable functioning of our kitchen operations.

Key Responsibilities:

Food and Beverage Production Planning:

  • Develop and implement effective production planning strategies to ensure timely and efficient food preparation and service.
  • Manage inventory levels and ensure that par stock is maintained to minimize waste and optimize resource utilization.

People Management:

  • Lead and motivate a team of culinary professionals to achieve exceptional service standards and quality results.
  • Provide coaching and training to ensure that team members have the necessary skills and knowledge to excel in their roles.
  • Maintain a safe and healthy work environment by enforcing strict adherence to health and safety protocols.

Financial Management:

  • Monitor and analyze food costs to identify opportunities for cost savings and efficiency improvements.
  • Develop and implement strategies to minimize food waste and optimize resource utilization.

Operational Management:

  • Ensure that all food preparation and presentation meet the highest standards of quality and presentation.
  • Develop and implement effective systems for managing kitchen operations, including inventory management, staff scheduling, and equipment maintenance.

Qualifications:

  • Minimum of 4 years of experience in a hotel or restaurant kitchen at a comparable level of luxury service.
  • Proven track record of success in leading and motivating a team to achieve exceptional results.
  • Excellent culinary and food safety skills, with a strong understanding of kitchen operations and management principles.
  • Strong communication and interpersonal skills, with the ability to work effectively with colleagues and external partners.

Working Conditions:

  • Work in a fast-paced kitchen environment, with a high level of physical activity and attention to detail required.
  • Work variable shifts, including evenings, weekends, and holidays.
  • Be able to taste and handle food products, including meats, seafood, produce, dry goods, and dairy products.
