Job Title: Director of Culinary
About the Role:
The Director of Culinary is a vital member of the AccorHotel team, responsible for overseeing all aspects of the kitchen and food service operations. This includes purchasing and inventory management, employee training and development, and ensuring the highest quality food presentation and temperature control.
Key Responsibilities:
- Ensure consistency and quality in food taste, presentation, and temperature control.
- Maintain the quality and cleanliness of all food displays.
- Maximize creativity in food displays.
- Ensure smooth communication among employees.
- Maintain the company's grooming standards.
- Monitor and maintain stock levels required for all services.
- Ensure good kitchen practices are maintained by example and by instruction.
- Develop extensive knowledge of Resort facilities and services and surrounding areas.
- Create, maintain, and enhance effective working relationships.
- Provide training for all employees on all aspects of the departmental operating procedures.
- Ensure purchasing, receiving, and storage are efficiently handled.
- Follow HACCP guidelines and ensure employee compliance.
- Lead by example, adopting a positive attitude to keep the team at its highest level.
- Manage the service department and ensure quality and standards are aligned with Novotel standards.
Requirements:
- Bachelor's degree in Culinary and F&B Arts or related field.
- 10 years of experience as a professional chef with 3 years in a senior management role.
- Culinary certification from an accredited institution.
- Strong understanding of food trends and culinary techniques.
- Excellent leadership, communication, and organizational skills.
Work Details:
Full-time employment with AccorHotel.
