Job Title: Food and Beverage Director

We are seeking an experienced Food and Beverage Director to join our team at AccorHotel.

Key Responsibilities:

  • Plan and implement outlet budgets and forecasts to ensure revenue and expenditure alignment.
  • Analyze and submit monthly reports to identify deviations from business plan goals.
  • Participate in management meetings to review progress and develop annual business plans.
  • Collaborate with the kitchen and marketing departments to implement profit enhancement programs.
  • Monitor and control food and beverage costs, labor costs, and operating supply costs to ensure alignment with budget.

Outlet Operations:

  • Conduct daily briefings to ensure all pertinent information is shared with team members.
  • Supervise team members to ensure tasks are completed on time and according to departmental standards.
  • Build relationships with guests and regular patrons, extending personalized service.
  • Handle guest complaints and comments tactfully and efficiently.
  • Manage administration work related to cashier/bar operations and company policies.
  • Maintain department communication logbooks and updated noticeboards.
  • Establish and maintain purchasing procedures for all beverages.
  • Maintain par levels of stocked beverages at all times.
  • Display beverage selections in an attractive manner.
  • Adhere to legal and/or company policies and standards.
  • Understand and follow laws and guidelines for beverage service.
  • Cleanliness standards for the outlet and back of the house must be maintained.
  • Maintain complete knowledge of beverage services, contents, and preparation methods.
  • Ensure health, safety, and security procedures are in place in the outlet.
  • Demonstrate thorough knowledge of beverage recipes and mixing procedures.
  • Create and maintain all beverage lists.
  • Perform proper handovers and communication to the next shift.
  • Assist other food and beverage outlets during peak times or when required.

Team Management:

  • Interview, select, and recruit outlet employees.
  • Identify and develop team members with potential.
  • Conduct performance reviews with the team.
  • Monitor team members' appearance, attitude, and professionalism.
  • Develop, conduct, and maintain staff training programs for team members.
  • Prepare weekly staff schedules, considering business operating budgets and standards of service.
  • Prepare payroll and gratuity reports.
  • Conduct monthly departmental meetings to provide information, obtain feedback, and rectify operation issues.

Main Complexity/Critical Issues:

  • Respond professionally, politely, and efficiently to extraordinary guest requests and complaints.
  • Responsible and accountable for outlets' profitability and revenue generation.

Qualifications:

Knowledge and Experience:

  • Secondary or high school education.
  • Additional certification(s) in Food and Beverage will be an advantage.
  • Good reading, writing, and oral proficiency in English language.
  • Ability to speak other languages and basic understanding of local languages will be an advantage.
  • Minimum 2 years of relevant experience in a similar capacity.
  • Good working knowledge of MS Excel, Word, and PowerPoint.
  • High degree of professionalism with sound human resources management and business acumen capabilities.
