Job Summary

We are seeking an experienced Senior Culinary Team Lead to oversee the preparation and presentation of meals in a fast-paced kitchen environment.

Key Responsibilities:

  • Directs, coaches, supports, supervises, and evaluates direct reports to ensure high-quality dishes are prepared efficiently.
  • Maintains excellent food knowledge and understands culinary terms to prepare company recipes with consistency and quality.
  • Coordinates and supervises team members assigned to their section, delegates tasks accordingly, and undertakes daily recipe reviews.
  • Responsible for follow-through on requests from supervisors, including show plates, food samples, and random tastings.
  • Controls production levels, recommends improvements, and ensures Public Health standards are followed according to company expectations.
  • Maintains assigned areas in preparation for inspections and reports discrepancies to supervisors.

Financial Responsibilities:

  • Manages cost containment through proper use of records, supplies, and equipment.
  • Identifies potential expense reductions and establishes controls to analyze operational problems.
  • Reviews timesheets and prepares various reports using personal computer systems.

Motivational Responsibilities:

  • Monitors workstation functions and staff performance to ensure quality standards and service are met.
  • Observes and evaluates work procedures to make recommendations regarding personnel actions.

Qualifications and Education:

  • A minimum of 8 years in an upscale hotel, resort, or cruise ship environment, with at least 2 years as Chef de Partie experience.
  • Culinary school degree required, with strong management skills in a multicultural environment.
  • Excellent communication, problem-solving, decision-making, and interpersonal skills.
