This is a senior culinary leadership role that oversees all kitchen operations, ensuring seamless and efficient food production. The successful candidate will have a proven track record in managing high-performing teams, driving cost control, and maintaining the highest standards of food safety and quality.


">Key Responsibilities:">
  • Food Production Management

The Chef Tournant will direct, coach, and evaluate team members to ensure optimal food production levels, meeting customer demands while controlling costs.

Team Supervision and Development

They will supervise, delegate tasks, and coordinate team efforts to achieve business objectives, fostering a positive work environment and encouraging staff growth.

Cost Control and Financial Management

The incumbent will identify areas for expense reduction, analyze operational problems, and establish controls to optimize resource utilization and minimize waste.

Quality Assurance and Food Safety

They will maintain impeccable records, adhere to health and safety regulations (US, Anvisa, Shipsan, Canadian, Australian), and conduct regular inspections to guarantee exceptional product quality and guest satisfaction.

Leadership and Communication

Effective communication, problem-solving, decision-making, and interpersonal skills are essential for this role, as the Chef Tournant will interact with senior officers, corporate offices, and external partners.

Skill Enhancement and Reporting

The position requires strong planning, coaching, organizing, staffing, controlling, and evaluating skills, as well as proficiency in software applications and basic accounting principles.

  • Culinary Background

A minimum of 5 years of experience in an upscale hotel, resort, cruise ship, or convention banqueting service, preferably as a Chef Tournant (shipboard experience beneficial).

Culinary Education

A degree from a reputable culinary school is required.

Management Skills

Excellent management skills in multicultural environments are crucial for success in this role.

Technical Skills

Proficiency in computer software applications, particularly those related to hospitality and food services.
