Responsible for preparing and presenting high-quality Continental dishes, managing a station, and maintaining kitchen standards of hygiene, quality, and speed.
**Key Responsibilities**
- Run your assigned station (grill/sauté/garde manger/pastry) during service.
- Prep mise en place to par levels; ensure freshness, labeling, FIFO.
- Cook and plate menu items per SOPs, portion sizes, and presentation standards.
- Maintain food safety & hygiene (FSSAI/HACCP practices, temp logs, cleaning schedules).
- Assist with new dish trials, seasonal menus, and specials.
- Monitor stock for your station; raise indents, minimize wastage, support cost control.
- Train and guide Commis chefs; ensure smooth pass and coordination with service.
- Support inventory counts and daily opening/closing checklists.
- Communicate equipment issues and participate in maintenance/cleanliness routines.
**Requirements**:
- 1-4 years’ experience as Commis I/II or CDP in a Continental/European kitchen.
- Sound knowledge of sauces, stocks, grills, pasta, salads, sandwiches, eggs, and plating.
- Understanding of basics: knife skills, cooking methods, seasoning, and timing.
- Familiarity with SOPs, portion control, and kitchen sanitation standards.
- Qualification: Hotel Management diploma/certification preferred (not mandatory).
- Shift flexibility; ability to work in a fast-paced, high-volume environment.
**KPIs**
- Food quality & consistency scores; plating accuracy.
- Station prep readiness and service speed (ticket times).
- Wastage %, inventory variance, and adherence to portioning.
- Hygiene/audit scores; compliance with temp logs and checklists.
- Training effectiveness and teamwork feedback.
**Compensation & Shift**
- Salary: 18,000 to 30,000 based on skills
- Schedule: 10 hour shifts; 1 weekly off (rotational).
**Growth**
- Opportunity to lead a section, contribute to menu R&D, and progress to Jr. Sous/Sous Chef based on performance.
Pay: ₹18,000.00 - ₹30,000.00 per month
