**Chef Tournant Job Description**
This is a senior culinary position that oversees the entire kitchen production, ensuring that all food items meet the highest quality and safety standards. The Chef Tournant will be responsible for directing, coaching, supporting, supervising, and evaluating all direct reports.
The ideal candidate must have excellent food knowledge and a full understanding of culinary terms. They must also be able to read, understand, follow, and prepare company recipes by maintaining the quality and consistency in taste according to the instructions provided by the corporate office.
The Chef Tournant will be responsible for coordinating and supervising all team members assigned to their section, assigning and delegating tasks accordingly. They will undertake recipe reviews daily and maintain recipe folders in immaculate condition.
The successful candidate must be able to work in any section of a kitchen and be proficient in completing tasks efficiently and productively. They must also be able to oversee any main section and its entire food production.
Maintaining and ensuring that Public Health are followed according to company standards and expectations is essential for this role. The Chef Tournant will ensure that the HACCP program is carried out correctly and maintain their assigned area in preparation for announced or unannounced United States Public Health type inspections.
Key Responsibilities:
- Directs, coaches, supports, supervises, and evaluates all direct reports.
- Coordinates and supervises all team members assigned to their section.
- Undertakes recipe reviews daily and maintains recipe folders in immaculate condition.
- Ensures that Public Health are followed according to company standards and expectations.
- Maintains and ensures that the HACCP program is carried out correctly.
Required Skills and Qualifications:
- A minimum of 5 years in an upscale hotel, resort, cruise ship or convention banqueting service.
- At least 2 years as Chef Tournant (shipboard experience preferred).
- Culinary school degree required.
- Strong management skills in a multicultural and dynamic environment.
- Excellent communication, problem-solving, decision-making, and interpersonal skills.
- Superior customer service, teambuilding, and conflict resolution skills.
