Job Title: Senior Culinary Team Leader

A senior culinary team leader is a skilled professional responsible for overseeing the preparation and presentation of food in a high-pressure kitchen environment.

  • Directs, coaches, and evaluates team members to ensure exceptional food quality and service standards.
  • Coordinates and supervises all team members assigned to their section, assigning and delegating tasks accordingly.
  • Maintains recipe folders in immaculate condition and undertakes daily recipe reviews.
  • Responsible for follow-through on any request within the area of responsibility received from the direct supervisor or manager on duty.
  • Control production levels and recommends ideas for improvements and better cost controlling.
  • Prepares daily electronic food requisitions needed for his section production and counterchecks deliveries for accuracy.
  • Overssees main sections (Sauce, Entremetier, Fish, Roast, Outlet CDP, Tournant, and Cold Kitchen) and ensures compliance with Public Health standards and expectations.
  • Maintains assigned areas in preparation for inspections and reports discrepancies to the immediate supervisor.
  • Ensures HACCP program implementation and maintains personal appearance, uniform, and hygiene according to company rules.

Key Responsibilities:

  • Manages costs through proper use, handling, and maintenance of records, supplies, and equipment.
  • Identifies potential expense reductions through cost control and analyzes operational problems.
  • Reviews timesheets, prepares reports, and conducts workstation spot checks to minimize deterioration and waste.

Essential Qualifications and Experience:

  • A minimum of 8 years in an upscale hotel, resort, cruise ship, or convention banqueting service.
  • At least 2 years as Chef de Partie, preferably with shipboard experience.
  • Culinary school degree required.
  • Strong management skills, communication, problem-solving, decision-making, and interpersonal skills.
  • Superior customer service, teambuilding, and conflict resolution skills.
  • Knowledge of personalized service principles, quality service standards, alternative delivery systems, and guest satisfaction evaluation techniques.
  • Strong planning, coaching, organizing, staffing, controlling, and evaluating skills.
  • Intermediate computer software skills required.
  • Understanding of basic accounting principles, including numbering flow, debits/credits, adjusting entries, and corrections.
  • Ability to write reports and business correspondence and establish good rapport with Senior Officers and corporate office.
