The Executive Culinary Operations Manager plays a pivotal role in maintaining an efficient kitchen operation by continually evaluating the quality and cost of food production.
- Key Responsibilities:
- Monitor and control costs, ensuring optimal time management.
- Provide ongoing training and ensure adherence to corporate standards.
- Guarantee safe and high-quality food products while delivering exceptional guest satisfaction.
- Develop and implement systems, procedures, and rules as set by the organization, adhering to disciplined task execution.
- Improve service and product quality within a specialized area of expertise.
- Display an accommodating and helpful demeanor.
- Accept objectives set by others and work within agreed parameters to complete tasks efficiently.
- Mentor and support subordinates, promoting morale and personal growth.
- Maintain a positive crew atmosphere, treating all team members fairly and with respect.
- Ensure strict adherence to menus, recipes, methods, and operational specifics provided by the company.
- Seek guidance from others when necessary.
- Achieve goals through efficient and non-assertive means.
- Conduct daily food tastings and correct any discrepancies immediately.
- Assist Section Heads in preparing electronic food requisitions according to forecasted figures.
- Monitor the Dinner Service Line for smooth and efficient service, presentation, and final plating.
- Use the Culinary Checklist to monitor production and preparation levels.
- Adhere to Public Health regulations at all times.
- Advanced culinary skills, leadership, and experience are essential.
- A minimum of 8 years' experience in quality hotels and restaurants is required.
- At least 2 years of experience in a management role in a well-recognized luxury hospitality establishment or upscale cruise line is necessary.
- Fluency in written and spoken English is mandatory.
- Effective communication with senior management is crucial.
- The ability to lead and make decisions is vital.
- Strong administrative skills are required.
- Experience in coaching subordinates is highly valued.
- Candidates must be cost and quality conscious.
- They should adhere to scheduled work hours yet be flexible when circumstances require it.
- International team members will be worked with.
- Performing assigned duties under pressure is essential.
Preferred Skills:
- Cruise Ship Experience or 5-star Hotel experience.
- Fluency in additional language(s) is desirable.
