Job Description – Commi 1, 2 & 3 (South Indian Cuisine)
Location: Borivali / Chembur / Lower Parel/ Mumbai
Job Purpose
We are looking for South Indian Cuisine Commis (Levels 1, 2 & 3) to join our team. The role involves assisting in the preparation, cooking, and presentation of authentic South Indian dishes such as dosa, idli, vada, sambar, chutneys, and traditional thalis.
- Commi 1 – Independently manages the assigned section, ensures quality, and trains junior staff.
- Commi 2 – Supports Commi 1/CDP in food preparation, cooking, and mise-en-place management.
- Commi3 – Handles basic preparation, cutting, cleaning, and assists seniors while developing culinary skills.
Candidates must have a passion for South Indian cuisine, strong attention to detail, and a commitment to hygiene and quality standards while working under the guidance of the CDP/Sous Chef.
Key Responsibilities
1. Food Preparation & Cooking
- Prepare a variety of South Indian dishes (dosa, vada, idli, upma, pongal, sambar, chutneys, etc.) as per recipes.
- Maintain taste, portion control, and consistency in presentation.
- Ensure mise-en-place is ready and food is served fresh and hot.
- Contribute to new recipe and menu development.
2. Kitchen Operations & Coordination
- Commi 1: Run assigned section smoothly.
- Commi 2 & 3: Assist in section operations and workflow.
- Coordinate with service staff to ensure timely order execution.
- Complete opening and closing checklists.
- Report shortages, stock requirements, and issues to CDP/Sous Chef.
3. Inventory & Stock Management
- Monitor stock levels and follow FIFO procedures.
- Reduce wastage through efficient ingredient use.
- Label and store food items as per hygiene standards.
4. Teamwork & Training
- Comi1: Mentor and guide Commi 2 & 3 on cooking techniques and hygiene.
- Commi2: Assist Commi1 and support junior commis.
- Commi 3: Learn from seniors and execute prep/cleaning tasks accurately.
- Promote teamwork and maintain discipline during busy operations.
5. Hygiene, Safety & Compliance
- Strictly follow FSSAI and food safety guidelines.
- Keep work station, tools, and equipment clean at all times.
- Maintain grooming standards and use PPE (gloves, aprons, sanitizers).
- Report equipment faults or safety issues immediately.
Requirements
- Commi1 – Minimum 4 years' experience in South Indian cuisine with independent section handling.
- Commi 2 – Minimum 3 years' experience assisting in South Indian cooking.
- Commi 3 – Minimum 2 years' experience with a strong interest in South Indian cuisine and eagerness to learn.
- Expertise in dosa/idli batter preparation, chutneys, gravies, and tawa operations.
- Strong knowledge of kitchen hygiene and food safety protocols.
- Ability to perform in high-volume, fast-paced kitchens.
- Good communication, multitasking, and team coordination skills.
- Willingness to work in shifts, on weekends, and during festive periods.
