A Commis 1 Chef is a skilled junior cook responsible for preparing, cooking, and presenting high-quality dishes in accordance with the kitchen's standards. This role supports senior chefs, ensures kitchen operations run smoothly, and maintains high food safety and hygiene practices.
Key Responsibilities1. Food Preparation & Cooking
- Prepare and cook dishes according to standard recipes, portion sizes, and quality guidelines.
- Assist in preparing ingredients, mise en place, sauces, stocks, and garnishes.
- Ensure all food items are cooked and presented to the highest quality.
2. Kitchen Operations
- Support Chef de Partie in day-to-day operations of the assigned section (e.g., hot kitchen, cold kitchen, grill, pastry).
- Work efficiently to maintain workflow during busy service periods.
- Monitor stock levels and communicate needs to senior chefs.
3. Food Safety & Hygiene
- Follow all food handling, sanitation, and hygiene protocols (HACCP or equivalent).
- Maintain cleanliness of workstations, equipment, and storage areas.
- Ensure proper labeling, storage, and rotation of ingredients (FIFO).
4. Teamwork & Coordination
- Collaborate closely with chefs and other kitchen staff to ensure timely service.
- Assist and guide Commis II / Commis III when needed.
- Communicate effectively about any issues, shortages, or delays.
5. Quality Control
- Check the freshness and quality of ingredients before use.
- Ensure dishes meet the restaurant's presentation and taste standards.
- Suggest improvements to dishes or processes when appropriate.
Qualifications
- Diploma or certification in Culinary Arts or related field.
- Minimum 1–2 years' experience in a professional kitchen (preferred).
- Knowledge of cooking techniques, ingredients, and kitchen equipment.
- Strong knife skills and attention to detail.
Key Skills
- Time management and ability to work under pressure.
- Good communication and teamwork skills.
- Strong sense of responsibility and a passion for cooking.
- Ability to follow instructions and adapt to fast-paced environments.
Physical Requirements
- Ability to stand for long periods.
- Ability to lift moderately heavy items (up to 20–25 kg).
- Comfortable working in a hot, fast-paced environment.
