Overview:
Milagro, an upscale fine dining restaurant in Worli, Mumbai, is seeking an experienced Pastry Chef with a strong background in French pastry. The ideal candidate will bring expertise in classic and modern French pastry techniques, a passion for innovation, and a commitment to excellence. This role is pivotal in delivering the finest desserts that elevate the dining experience for our guests.
Key Responsibilities:
French Pastry Expertise:
· Create and design a variety of high-quality French pastries, including viennoiseries, tarts, éclairs, macarons, and plated desserts.
· Innovate and develop new pastry recipes while maintaining the authenticity of French pastry techniques.
Pastry Production:
· Oversee daily pastry production to ensure quality, consistency, and presentation of all desserts.
· Ensure all pastries meet Milagro's high standards and are prepared in a timely manner for service.
Menu Development:
· Collaborate with the Executive Chef to plan and develop seasonal dessert menus that complement the restaurant's overall culinary offering.
· Incorporate fresh, high-quality ingredients and seasonal flavors into your pastry creations.
Team Management:
· Lead and manage a team of pastry assistants and junior chefs, providing training, guidance, and mentorship.
· Ensure efficient workflow in the pastry section, maintaining a clean and organized work environment.
Hygiene & Quality Control:
· Uphold strict hygiene and safety standards in the pastry kitchen, ensuring compliance with food safety regulations.
· Conduct regular quality checks on ingredients and finished products to ensure consistency.
Cost Control & Inventory:
· Manage pastry section inventory, ensuring proper stock levels of ingredients and minimizing waste.
· Work closely with the Executive Chef to monitor food costs and ensure profitability in the pastry department.
Qualifications & Experience:
· Extensive experience in French pastry, with a minimum of 5 years in a high-end restaurant, patisserie, or hotel environment.
· Strong knowledge of both classic and contemporary French pastry techniques.
· Proven track record in menu development and pastry innovation.
· Formal culinary education specializing in pastry, preferably from a recognized institution.
· Excellent leadership, organizational, and time management skills.
· Ability to work efficiently under pressure and in a fast-paced kitchen environment.
