Job Summary
The Chinese Commis I is responsible for preparing and cooking authentic Chinese dishes, ensuring high standards of taste, presentation, and consistency. The role involves handling wok cooking, sauces, dim sum preparation, and other Chinese culinary techniques under the supervision of senior chefs.
Key Responsibilities
- Prepare and cook Chinese cuisine items (stir-fries, noodles, fried rice, sauces, soups, dim sum, etc.) according to standardized recipes and portion sizes.
- Set up and maintain mise en place for all food sections before and during service.
- Operate and maintain all Chinese kitchen equipment such as woks, steamers, fryers, and rice cookers safely.
- Ensure consistency in taste, presentation, and quality of all dishes.
- Follow the guidance of the Chef de Partie and Sous Chef in daily kitchen operations.
- Maintain food hygiene, cleanliness, and sanitation in work areas, complying with HACCP and food safety standards.
- Check the freshness and quality of ingredients daily; report any spoilage or shortages.
- Store food items properly following FIFO (First In, First Out) procedures.
- Assist in training junior kitchen staff (Commis II & Commis III) and help them improve their cooking skills.
- Work efficiently during busy periods while maintaining calm and focus.
- Coordinate with other sections (Continental, Indian, Pastry) to ensure smooth kitchen operations.
Qualifications & Skills
- Diploma or certification in Culinary Arts / Hotel Management (specialization in Chinese cuisine preferred).
- 1–2 years of experience as Commis I or 2–3 years as Commis II in a Chinese kitchen.
- Strong knowledge of Chinese culinary techniques, including wok handling, steaming, and sauce preparation.
- Good understanding of flavor balancing and seasoning used in different Chinese regions (Cantonese, Sichuan, Hunan, etc.).
- Familiarity with food safety, hygiene, and kitchen sanitation procedures.
- Team player with good communication and time-management skills.
- Ability to work under pressure and maintain consistency during high-volume service.
- Flexibility to work in shifts, weekends, and holidays.
