Job Summary
The Commis I – Continental is responsible for preparing, cooking, and presenting dishes from the continental menu under the supervision of senior chefs. The role demands strong culinary knowledge, consistency in food quality, and adherence to kitchen hygiene and safety standards.
Key Responsibilities
- Prepare and cook continental dishes (pastas, grills, sauces, salads, soups, etc.) according to standardized recipes.
- Ensure mise en place is completed for all assigned sections before service begins.
- Maintain high quality, taste, and presentation of food at all times.
- Assist the Chef de Partie and Sous Chef in daily kitchen operations.
- Follow portion control, temperature standards, and recipe cards strictly.
- Check and ensure the freshness of ingredients and report any spoilage.
- Maintain cleanliness and hygiene in assigned work areas and follow all HACCP / food safety standards.
- Properly store food items using FIFO (First In, First Out) method.
- Help train and guide Commis II / Commis III as directed by senior chefs.
- Work collaboratively with other kitchen staff to ensure smooth service during peak hours.
- Report maintenance or equipment issues promptly to the Chef de Partie.
Qualifications & Skills
- Diploma or certification in Culinary Arts / Hotel Management preferred.
- Minimum 1–2 years of experience as Commis I or 2–3 years as Commis II in a continental kitchen.
- Strong knowledge of continental cuisine techniques, sauces, and plating styles.
- Understanding of kitchen safety, sanitation, and food handling procedures.
- Ability to work under pressure and maintain consistency during busy service.
- Good communication skills and teamwork attitude.
- Flexibility to work in shifts, weekends, and holidays.
