Job Summary:

Gokulam Grand Trivandrum is seeking a passionate and experienced Chef de Partie (CDP) or Demi Chef de Partie (DCDP) specializing in South Indian cuisine to join our culinary team. The ideal candidate will have a minimum of 7 years of experience in 5-star hotel kitchens, with deep knowledge of traditional South Indian flavors, techniques, and presentation. You will be responsible for maintaining high standards of food quality, hygiene, and consistency, delivering exceptional culinary experiences to our guests.

Key Responsibilities:

  • Prepare and present authentic South Indian dishes with consistency and high standards.
  • Manage daily kitchen operations in your section, ensuring timely and quality output.
  • Maintain hygiene, food safety, and sanitation standards in compliance with HACCP.
  • Assist the Sous Chef in menu planning, food costing, and seasonal promotions related to South Indian cuisine.
  • Ensure proper handling and storage of all food items.
  • Train and guide junior staff in South Indian cooking techniques and presentation.
  • Monitor portion control, minimize wastage, and ensure optimal use of kitchen resources.
  • Coordinate with service staff for timely food service during buffet, à la carte, and banquet operations.
  • Maintain inventory and order ingredients as required for the South Indian kitchen section.

Key Requirements:

  • Minimum 7 years of experience in the kitchen of a 5-star hotel, with at least 2–3 years in a CDP or DCDP role.
  • Proven expertise in South Indian cuisine.
  • Strong understanding of traditional and modern cooking methods and plating techniques.
  • Ability to work under pressure and in a fast-paced environment.
  • Excellent organizational and leadership skills.
  • Knowledge of food hygiene, safety regulations, and HACCP standards.
  • Culinary degree or diploma from a recognized institute is preferred.
