The Commis – Sushi is responsible for assisting the Sushi Chef in the preparation of sushi items, mise-en-place, cutting, rolling, and plating sushi and Japanese appetizers for delivery. The role ensures quality, hygiene, freshness of produce, and consistency in taste and presentation tailored for a cloud kitchen model.

Key Responsibilities:Sushi Preparation & Production:

  • Assist in preparing sushi rolls, nigiri, sashimi, maki, uramaki, temaki, and Japanese appetizers.
  • Handle washing, cleaning, cutting, and storage of fish, seafood, vegetables, and sushi ingredients.
  • Prepare rice seasoning, sushi rice, sauces, condiments, and garnishes as per standards.
  • Support in packaging of sushi items to maintain freshness, shape, and presentation during delivery.

Kitchen Operations:

  • Maintain organized workstations for efficient sushi preparation and assembly during peak hours.
  • Ensure accurate portioning, ingredient usage, and minimal wastage.
  • Follow daily mise-en-place schedules: cutting, marinating, boiling, seasoning, and storing ingredients.
  • Assist in checking quality of raw fish and other perishables upon receiving.

Food Safety, Hygiene & Storage:

  • Follow strict Japanese food hygiene and seafood handling standards.
  • Maintain proper storage temperature and conditions for fish, rice, and perishables.
  • Ensure correct labeling, FIFO, and food rotation practices.
  • Maintain cleanliness of knives, boards, mats, and sushi equipment at all times.

Quality & Standards:

  • Uphold taste, texture, and presentation standards specific to Sushi and Japanese cuisine.
  • Ensure freshness, correct cutting techniques, and visual appeal of all sushi items.
  • Report any quality concerns, product shortage, or deviations to the Sushi Chef/CDP.

Job Types: Full-time, Permanent

Pay: ₹15, ₹20,000.00 per month
