Position Summary
We are seeking experienced and passionate professionals to lead our Pastry & Bakery division across multiple outlets. This role involves managing daily production, ensuring high quality and consistency, supervising staff, maintaining hygiene standards, managing inventory, and contributing to new product development.
Key Responsibilities
Production & Operations
- Manage daily production schedules across all pastry and bakery outlets
- Ensure products meet quality, taste, and presentation standards
- Oversee mise-en-place and ensure timely dispatch
- Coordinate with service and dispatch teams to ensure smooth operations
- Manage operations efficiently across multiple outlets
Team Management
- Supervise and mentor the pastry & bakery team
- Train staff in pastry techniques and HACCP compliance
- Assign tasks and monitor performance to meet production goals
Quality & Hygiene
- Maintain hygiene standards as per food safety protocols
- Ensure proper labelling, storage, and FIFO rotation
- Report equipment issues and oversee maintenance
Inventory & Cost Control
- Minimize raw material wastage
- Assist in stock-taking and inventory control
- Maintain portion control and consistency
Requirements
- Minimum 7+ years of experience in a hotel or high-volume pastry/bakery unit
- Formal education in pastry/culinary arts preferred
- Expertise in breads, viennoiserie, cakes, and plated desserts
- Strong leadership and time management skills
- Excellent communication and organizational ability
