- Inventory management: Monitoring stock levels and ordering supplies
- Menu development: Contributing to the development of new dishes and refining existing recipes
- Team management: Leading, supervising, and motivating the shift team
- Training: Supervising and training demi-chef de parties or commis chefs
- Waste control: Monitoring portion and waste control to keep within budget
- Resource management: Helping to reduce the department's use of resources
- Communication: Ensuring good staff communications and relations
- Kitchen security: Ensuring good kitchen securitY
