The **DCDP - Chinese Cuisine** is responsible for preparing high-quality Chinese dishes, maintaining kitchen hygiene, and assisting the **CDP and Sous Chef** in smooth kitchen operations. The role requires expertise in traditional and modern Chinese cooking techniques, including wok skills, dim sum preparation, and sauce-making.
**Key Responsibilities:Food Preparation & Cooking**:
Prepare, cook, and present **Chinese dishes** with authentic flavors.
Master wok handling, steaming, roasting, and stir-frying techniques.
Assist in creating **Chinese menu items** (Dim Sum, Noodles, Rice, Szechuan, Cantonese, etc.).
Ensure consistency in taste, presentation, and portion control.
Maintain **mise en place** and stock levels in the kitchen.
**Kitchen Operations**:
Assist the CDP and Sous Chef in managing the **Chinese kitchen section**.
Monitor and maintain **quality control** during food preparation.
Coordinate with **service staff** to ensure timely food delivery.
**Hygiene & Safety Compliance**:
Follow **food safety & hygiene standards** (FSSAI regulations).
Ensure all kitchen tools and workstations are **clean and sanitized**.
Maintain proper storage of ingredients to prevent contamination.
**Inventory & Cost Control**:
Assist in stock management and **minimize wastage**.
Report shortages and ensure raw materials are available.
Follow portion control to **maintain food cost efficiency**.
**Qualifications & Skills**:
**Education**: Diploma/Degree in Hotel Management, Culinary Arts, or equivalent.
**Experience**: 2-5 years in a **Chinese kitchen** (preferably in a resort or 5-star hotel).
**Skills Required**:
- Strong knowledge of **Chinese cooking techniques & sauces**.
- Expertise in using **wok, steamer, and cleaver**.
- Ability to work in a **fast-paced kitchen environment**.
- Good team player with strong communication skills.
Pay: ₹25,000.00 - ₹30,000.00 per month
Schedule:
- Rotational shift
