Job Title: Executive Chef - Tournant

This role is a key part of the Food and Beverage team, overseeing culinary operations on board our ships. The ideal candidate will be a highly skilled and experienced chef who can lead and motivate their team to deliver exceptional cuisine and service.

  • Main Responsibilities:
  • Directs, coaches, and supervises direct reports.
  • Maintains excellent food knowledge and understanding of culinary terms.
  • Prepares company recipes by maintaining quality and consistency in taste according to corporate office instructions.
  • Completes tasks efficiently and productively.
  • Coordinates and supervises team members assigned to their section, assigns and delegates tasks accordingly.
  • Undertakes daily recipe reviews and maintains recipe folders in immaculate condition.
  • Follows through on requests from direct supervisors or managers on duty.
  • Controls production levels and recommends improvements and cost controlling ideas.
  • Prepares daily electronic food requisitions needed for their section production and counterchecks deliveries for accuracy, reporting discrepancies to their immediate supervisor.
  • Oversees main sections (Sauce, Entremetier, Fish, Roast, Outlet CDP, Tournant, and Cold Kitchen) and their entire food production.
  • Maintains Public Health standards and expectations within their section.
  • Ensures HACCP program implementation.
  • Maintains their assigned area in preparation for inspections.
  • Reports for duty at assigned times and follows supervisor instructions.

Key Skills and Qualifications:

  • A minimum of 5 years' experience in an upscale hotel, resort, cruise ship, or convention banqueting service, with at least 2 years as a Chef Tournant (shipboard experience preferred).
  • Culinary school degree required.
  • Strong management skills in a multicultural and dynamic environment.
  • Strong communication, problem-solving, decision-making, and interpersonal skills.
  • Superior customer service, teambuilding, and conflict resolution skills.
  • Knowledge of principles and processes for providing personalized services.
  • Strong planning, coaching, organizing, staffing, controlling, and evaluating skills.
  • Intermediate computer software skills required.
  • Good understanding of basic accounting principles.
  • Ability to write reports and business correspondence.
