Culinary Operations Manager

This role oversees the kitchen operations of a high-volume culinary environment. The ideal candidate will have extensive experience as a Senior Chef, with a proven track record of managing teams and controlling costs.

The successful candidate will be responsible for:

  • Directing, coaching, and evaluating direct reports;
  • Maintaining excellent food knowledge and adhering to established recipes;
  • Controlling production levels and recommending improvements;
  • Preparing daily requisitions and monitoring deliveries;
  • Oversighting main sections and ensuring Public Health standards are met;
  • Maintaining assigned areas in preparation for inspections;
  • Reporting for duty at assigned times and adhering to company policies and regulations.

Financial Responsibilities:

  • Cost containment through proper use and handling of records, supplies, and equipment;
  • Identifying expense reductions through cost control;
  • Analyzing operational problems and establishing controls;
  • Reviewing time sheets and preparing reports;
  • Conducting workstation spot checks.

Motivational Responsibilities:

  • Monitoring and managing workstation functions;
  • Assigning duties and responsibilities to staff;
  • Evaluating staff and work procedures to ensure quality standards;
  • Making recommendations regarding personnel actions;
  • Inspecting workstations and equipment to ensure efficient service.

Qualifications and Education:

  • A minimum of 5 years of experience in an upscale hotel, resort, or convention banqueting service;
  • At least 2 years as a Senior Chef (experience on cruise ships preferred);
  • A culinary school degree required;
  • Strong management skills in a multicultural environment;
  • Excellent communication, problem-solving, and interpersonal skills.
