Key Responsibilities:

As an Executive Sous Chef at AccorHotel, you will be responsible for ensuring the highest quality standards in food presentation. This includes monitoring food quality and consistency, performing yield testing, and ensuring that all perishable produce meets the hotel's specifications.

Additional Responsibilities:

Monitor dry and general stores daily to ensure that all perishable produce delivered to the hotel follows the written guidelines for product specifications. Conduct weekly kitchen walkthroughs and liaise with the Executive Steward to ensure that kitchen sanitation and engineering maintenance standards are met. Perform hands-on tasks as required to demonstrate international cuisine through food tasting. Ensure minimal wastage and proper product utilization at all times. Maintain a clean and hygienic environment by storing equipment and perishable items in their designated places. Work closely with the receiving department and storeroom to ensure received goods meet the hotel's quality standards.

Requirements:

This role requires a strong understanding of food quality and safety standards, as well as excellent communication and leadership skills. The ideal candidate will have experience in a similar role and be able to work effectively in a fast-paced kitchen environment.
