About the Position:
The Sous Chef plays a pivotal role in ensuring the smooth operation of the culinary department by maintaining an efficient workflow and consistently evaluating the quality and cost-effectiveness of food production.
Key Responsibilities:
- Manage resources effectively to maintain a high level of service quality while adhering to set standards.
- Develop and implement training programs to enhance team performance and ensure compliance with established corporate guidelines.
- Guarantee safe and quality food products, and prioritize guest satisfaction through attentive service.
- Establish and adhere to systems, procedures, rules, objectives, and timelines set by the organization, demonstrating discipline in task execution.
- Focus on improving the quality of the service and product provided within their technical/specialized area of expertise.
- Maintain a helpful and accommodating demeanor towards colleagues and guests.
- Accept and work towards achieving objectives set by others, operating within agreed parameters to ensure task completion.
- Provide guidance, mentorship, and support to subordinates to boost morale and personal esteem.
- Contribute to a positive crew atmosphere in the administration department, promoting fairness and unbiased treatment among team members.
- Ensure adherence to menus, recipes, methods, and operational specifics as outlined by the company.
- Seek direction from superiors when necessary.
- Achieve goals efficiently and effectively without asserting dominance.
- Conduct daily food tastings to guarantee quality standards.
- Correct discrepancies in quality, taste, or appearance promptly.
- Collaborate with Section Heads to prepare electronic requisitions according to forecasted figures.
- Monitor the Dinner Service Line to ensure smooth and efficient service, presentation, and final plating.
- Utilize the Culinary Checklist to assess production and preparation levels.
- Comply with Public Health regulations (US, Anvisa, Shipsan, Canadian, Australian, etc.) at all times.
