Senior Culinary Manager Position

Job Summary:

  • Lead a team of culinary professionals in the production of high-quality dishes, ensuring exceptional customer satisfaction.
  • Develop and implement recipes that showcase creativity and consistency in flavor and presentation.
  • Coordinate and supervise kitchen staff, assigning tasks and delegating responsibilities to achieve optimal performance.
  • Maintain production levels, recommend improvements, and ensure cost-effective operations.
  • Prepare requisitions, inspect deliveries, and report discrepancies to management.
  • Oversee all kitchen sections, maintaining public health standards and conducting HACCP programs.
  • Ensure the kitchen is prepared for inspections and adheres to company policies and regulations.

Key Responsibilities:

  • Manage costs, maintain records, reports, supplies, and equipment.
  • Identify expense reductions through cost control and analyze operational problems.
  • Review timesheets, prepare reports, and letters using a personal computer system.
  • Conduct workstation spot checks to minimize deterioration and waste.

Required Skills and Qualifications:

  • A minimum of 8 years of experience in an upscale hotel, resort, or cruise ship environment.
  • Culinary school degree required, with strong management skills in a multicultural and dynamic environment.
  • Excellent communication, problem-solving, decision-making, and interpersonal skills.
  • Superior customer service, team-building, and conflict resolution skills.
