Job Overview

We are seeking a Senior Culinary Operations Manager to join our team. The ideal candidate will have a minimum of 5 years' experience in an upscale hotel, resort, cruise ship or convention banqueting service and at least 2 years as a senior culinary operations manager.

Responsibilities:
  • Directs, coaches, supports, supervises, and evaluates all direct reports.
  • Ensures excellent food knowledge and full understanding of culinary terms.
  • Responsible for maintaining the quality and consistency in taste according to company recipes and instructions provided by corporate office.
  • Coaches employees on completing tasks efficiently and productively.
  • Coordinates and supervises all team members assigned to their section, assigns and delegates tasks accordingly.
  • Undertakes daily recipe reviews and maintains recipe folders in immaculate condition.
  • Responsible for follow-through on any request within area of responsibility received from direct supervisor or manager on duty.
  • Controls production levels and recommends ideas for improvements and better cost controlling.
  • Prepares daily electronic food requisitions needed for his section production and counterchecks deliveries for accuracy; Reports any discrepancies to immediate supervisor.

Qualifications and Education

  • A minimum of 5 years in an upscale hotel, resort, cruise ship or convention banqueting service and at least 2 years as a senior culinary operations manager.
  • A culinary school degree is required.
  • Strong management skills in a multicultural and dynamic environment.
  • Excellent communication, problem solving, decision making, and interpersonal skills.
  • Superior customer service, team building, and conflict resolution skills.
  • Knowledge of the principles and processes for providing personalized services including needs assessment techniques, quality service standards, alternative delivery systems, and guest satisfaction evaluation techniques.
