The Commis role is a vital part of our culinary team. This position involves preparing and cooking dishes of assigned cuisine with authenticity and consistency.

Key Skills and Qualifications:
  • Preparation and cooking of dishes of assigned cuisine (South Indian, Chinese, Mughlai, Awadhi) with authenticity and consistency.
  • Management of mise-en-place and daily food preparation to ensure efficient service.
  • Portion control, plating standards, and hygiene compliance in the kitchen.
  • Training and supervision of junior commis in techniques, recipes, and kitchen safety.
  • Monitoring of inventory and assistance in requisitions to maintain optimal stock levels.
  • Maintenance of cleanliness and organization of the section to provide a safe working environment.
Commis II Roles:
  • Assistance in preparing ingredients, basic sauces, and garnishes to support menu offerings.
  • Cooking of standard menu items under guidance from senior chefs.
  • Ensurance that mise-en-place is ready for service to meet customer expectations.
  • Maintenance of kitchen hygiene and adherence to standard operating procedures (SOPs).
  • Reporting of shortages or quality issues to seniors to resolve promptly.
Commis III Roles:

Key Responsibilities:

  • Washing, peeling, chopping, and storing of ingredients to maintain freshness and quality.
  • Assistance with mise-en-place and stock rotation to optimize inventory management.
  • Following of instructions to learn basic cooking methods and techniques.
  • Maintenance of kitchen hygiene, dishwashing support if needed, and contribution to a clean working environment.
  • Development of knowledge of assigned cuisine to enhance menu offerings.
