
Executive Culinary Leader

The Sous Chef supports the Executive Chef in overseeing daily kitchen operations, ensuring seamless food production and exceptional service standards. This role is critical to maintaining a well-oiled kitchen team, promoting efficiency, and driving quality.
Key Responsibilities- Directs and evaluates direct reports, fostering growth and development within the team.
- Maintains thorough knowledge of culinary techniques and terminology.
- Prepares company recipes by adhering to quality and consistency standards.
- Efficiently completes tasks and coordinates team members for optimal productivity.
- Schedules recipe reviews and maintains accurate records.
- Fulfills requests from direct supervisors or managers on duty.
- Monitors production levels and recommends cost control measures.
- Submits electronic requisitions for section production and verifies delivery accuracy.
- Oversight of main sections includes Sauce, Entremetier, Fish, Roast, Outlet CDP, Tournant, and Cold Kitchen.
- Maintains adherence to Public Health standards.
- Contains costs through proper use and maintenance of records, supplies, and equipment.
- Identifies opportunities for expense reduction via cost control.
- Analyzes operational problems and implements corrective measures.
- Reviews timesheets and forwards them for approval.
- Prepares various reports using personal computer systems.
- E nsures timely and correct requisitioning of items.
- Monitors workstation functions and assigns duties to staff.
- Evaluates staff performance and work procedures to ensure quality standards.
- Makes recommendations regarding personnel actions.
- Inspects workstations and equipment for efficient service and conformance to standards.
