Job Overview

The Sous Chef supports the Executive Chef in overseeing daily kitchen operations, ensuring seamless food production and exceptional service standards. This role is critical to maintaining a well-oiled kitchen team, promoting efficiency, and driving quality.

Key Responsibilities
  • Directs and evaluates direct reports, fostering growth and development within the team.
  • Maintains thorough knowledge of culinary techniques and terminology.
  • Prepares company recipes by adhering to quality and consistency standards.
  • Efficiently completes tasks and coordinates team members for optimal productivity.
  • Schedules recipe reviews and maintains accurate records.
  • Fulfills requests from direct supervisors or managers on duty.
  • Monitors production levels and recommends cost control measures.
  • Submits electronic requisitions for section production and verifies delivery accuracy.
  • Oversight of main sections includes Sauce, Entremetier, Fish, Roast, Outlet CDP, Tournant, and Cold Kitchen.
  • Maintains adherence to Public Health standards.
Financial Oversight
  • Contains costs through proper use and maintenance of records, supplies, and equipment.
  • Identifies opportunities for expense reduction via cost control.
  • Analyzes operational problems and implements corrective measures.
  • Reviews timesheets and forwards them for approval.
  • Prepares various reports using personal computer systems.
  • E nsures timely and correct requisitioning of items.
Motivational Leadership
  • Monitors workstation functions and assigns duties to staff.
  • Evaluates staff performance and work procedures to ensure quality standards.
  • Makes recommendations regarding personnel actions.
  • Inspects workstations and equipment for efficient service and conformance to standards.
