About the Role

The primary focus of this position is to maintain exceptionally high standards of food production, ensuring quality and efficiency in all operations.

Key Responsibilities:

  • Maintain effective time management and cost control while analyzing quality and cost of food production.
  • Provide ongoing training and ensure adherence to corporate culinary standards.
  • Ensure safe, quality food products and complete guest satisfaction through diligent monitoring and corrective actions.
  • Develop and implement systems, procedures, rules, objectives, and timescales set by the organization.
  • Work within a technical/specialized area of expertise to improve service and product quality.
  • Achieve results through collaborative effort with subordinates to boost morale and personal esteem.
  • Develop and promote a positive atmosphere among crew members, treating all team members fairly and promoting a positive work environment.
  • Ensure full adherence to menus, recipes, methods, and operational specifics provided by the organization.
  • Seek direction and authority from others when necessary.
  • Achieve set goals in an efficient manner.
  • Conduct daily food tastings and address discrepancies immediately.
  • Monitor and assist Section Heads in preparing electronic food requisitions according to forecasted figures.
  • Ensure smooth and efficient service, presentation, and final plating during dinner service.
  • Monitor production and preparation levels using the Culinary Checklist.
  • Comply with Public Health regulations at all times.

Qualifications and Requirements:

  • Advanced culinary skills, leadership experience, and expertise.
  • Minimum 8 years of experience in quality hotels and restaurants.
  • At least 2 years of experience in a senior culinary role in a luxury hospitality establishment or upscale cruise line.
  • Fluent written and spoken English communication skills.
  • Ability to lead, make decisions, and communicate effectively with senior management.
  • Strong administrative and coaching skills.
  • Cost and quality consciousness.
  • Flexibility in scheduled work hours when circumstances require it.
  • Experience working with international team members.
  • Perform duties under pressure (time constraints).

Preferred Skills:

  • Cruise Ship or 5-star Hotel Experience.
  • Fluency in additional languages.
