Job Title:

Culinary Team Lead

We are seeking an experienced Culinary Team Lead to join our kitchen team. As a key member of our culinary team, you will be responsible for leading and coordinating the team to deliver exceptional dining experiences.

Key Responsibilities:

  • Direct and evaluate direct reports, providing coaching and support as needed.
  • Coordinate and supervise all team members assigned to their section.
  • Review recipes daily and maintain recipe folders in immaculate condition.
  • Ensure follow-through on requests from direct supervisors or managers.
  • Monitor production levels and recommend improvements.
  • Prepare electronic food requisitions and verify deliveries for accuracy.
  • Oversee main sections of the kitchen, including sauce, entremetier, fish, roast, and cold kitchen.
  • Maintain public health standards and ensure HACCP program compliance.
  • Report for duty at assigned times and follow supervisor's instructions.

Financial Management:

  • Manage costs through proper use of records, supplies, and equipment.
  • Identify potential expense reductions through cost control.
  • Analyze operational problems and establish controls.
  • Review timesheets and forward them to the Executive Chef for approval.
  • Ensure items are requisitioned in correct quantities within acceptable timeframes.

Motivational Leadership:

  • Monitor and manage workstation functions.
  • Assign duties and responsibilities to staff.
  • Evaluate staff and work procedures to ensure quality standards are met.
  • Make recommendations regarding personnel actions.
  • Inspect workstations, work areas, equipment, etc., to ensure efficient service and conformance to standards.
