The Commi-2 (Indian Cuisine) assists senior chefs in the preparation and cooking of authentic Indian dishes. Responsible for supporting mise-en-place, cooking as per recipes, and maintaining hygiene and quality standards in the Indian kitchen section.

Key Responsibilities:

  • Assist in preparation and cooking of Indian curries, tandoor items, gravies, rice, breads, and accompaniments.
  • Follow recipes, portion control, and presentation standards.
  • Support Commi-1, DCDP, and CDP in daily kitchen operations.
  • Ensure timely mise-en-place for service.
  • Monitor and maintain cleanliness, hygiene, and food safety standards.
  • Handle ingredients carefully and minimize wastage.
  • Operate basic kitchen equipment safely and efficiently.
  • Assist in training and guiding Commi-3 and new staff when required.
  • Report shortages, equipment issues, or maintenance needs to seniors.

Skills & Requirements:

  • Good knowledge of Indian cuisine (curries, tandoor, breads, gravies, rice, snacks).
  • Ability to work in a fast-paced kitchen environment.
  • Strong understanding of hygiene and food safety practices (HACCP).
  • Team player with good communication and positive attitude.
  • Ability to multitask and work under pressure during peak hours.

Qualification & Experience:

  • Diploma/Certificate in Culinary Arts or equivalent.
  • 12 years of relevant experience in Indian kitchen (hotels/restaurants).
