Role & responsibilities

  • Prepare reports on monthly basis - COS Report, Uniform tracker, inter store stock movement etc. along with wastage analysis, supplies analysis, employee meal consumption tracker.
  • Prepare Theoretical Cost Waterfall, Menu Mix analysis, Price Mix Analysis
  • Monthly analysis of theoretical cost and wastage movement and reasoning. Ensure minimum wastage at outlet level without violation of SOP.
  • Share and discuss monthly COS with area coaches and operation heads Review inventory and consumption and highlight and resolve variances with respective area coaches for corrective action.
  • Calculate cost of employee meals on quarterly basis
  • Keep track SKU prices (ingredients) vs budgeted price given by SCM and keep track of overall COS (theoretical cost, wastage etc.) with budget
  • Create new products recipes and new combos with input from Chef and Marketing team.
  • Update Recipe Master Database on regular basis for changes in recipes and combos
  • Replace existing SKUs with new SKUs in recipes, if any.
  • Co-ordinate with IT & SCM team for updating SKU prices in the system. Verify and ensure that prices are accurately updated in Posist periodically.

Add new Raw Material SKUs in database and link with recipes as required

  • Outlet visit on monthly basis to check audit points related to F&B Controls

Assistance in annual stock audits - data availability and coordination with store teams and auditors
