We are looking for a skilled Tandoor Chef de Partie (CDP) to manage our tandoor section, preparing authentic North Indian tandoori dishes, breads, and kebabs. The ideal candidate is passionate about Indian cuisine, maintains high hygiene standards, and can work efficiently under pressure.

Key Responsibilities:

  • Operate and manage the tandoor, including preparation, cooking, and finishing of tandoori dishes.
  • Prepare and cook various items such as naan, roti, kulcha, kebabs, paneer tikka, chicken tandoori, and other specialty dishes.
  • Ensure proper marination, dough preparation, and seasoning according to recipes and quality standards.
  • Maintain the cleanliness and hygiene of the tandoor and surrounding kitchen area.
  • Monitor inventory, stock levels, and report shortages to the Sous Chef / Executive Chef.
  • Assist in menu planning, recipe development, and portion control for the tandoor section.
  • Train and supervise junior staff or commis chefs in the tandoor section.
  • Adhere to safety standards and ensure safe handling of food, tools, and equipment.
  • Work collaboratively with other kitchen sections to ensure timely and high-quality service.

Requirements:

  • Proven experience as a Tandoor Chef or CDP in Indian cuisine (2–5 years preferred).
  • Strong knowledge of North Indian tandoori dishes, marinades, and bread-making techniques.
  • Ability to work in a fast-paced environment while maintaining consistency.
  • Knowledge of kitchen hygiene and food safety standards (FSSAI compliance preferable).
  • Good teamwork and communication skills.
  • Passion for culinary arts and willingness to learn and innovate.
