  • Food Preparation & Cooking: Preparing and cooking a wide variety of Chinese dishes (e.g., stir-fries, noodles, dim sum, regional specialties like Cantonese or Szechuan) to high standards of taste and presentation.
  • Kitchen Management: Overseeing daily kitchen operations for the Chinese section, which includes managing junior staff (Commis, CDPs) and ensuring an organized and efficient workflow.
  • Menu Development: Planning, developing, and innovating new menu ideas while maintaining the authenticity and quality of traditional Chinese cuisine.
  • Quality Control & Hygiene: Ensuring strict compliance with food safety, sanitation, and hygiene regulations.
  • Inventory & Cost Management: Monitoring ingredient stock levels, ordering supplies, and managing food costs and wastage.

Required Skills & Qualifications:

  • Proven experience as a Chinese Chef or in a similar culinary role.
  • In-depth knowledge of Chinese culinary techniques (wok cooking, steaming, braising) and ingredients.
  • Strong leadership, communication, and team management skills.
