Reports To: Production Supervisor / Production Manager / Chef (R&D/Production)

Job Purpose:

The Cook (Preparation) will be responsible for preparing raw materials, ingredients, and cooked batches for Ready-to-Eat (RTE) and Frozen Foods manufacturing. This role involves following standard recipes, maintaining hygiene and food safety, operating kitchen and cooking equipment, and ensuring consistency in taste and product quality.

Key Responsibilities:

  1. Food Preparation & Cooking

  2. Carry out preparation of ingredients—cleaning, cutting, marination, mixing, thawing, and portioning as per the batch sheet.

  3. Cook food products (Indian, Continental, Snacks, Frozen Foods, etc.) as per standard recipe cards (SRC).
  4. Ensure strict adherence to batch production schedules.
  5. Maintain consistency of taste, seasoning, and texture according to product specifications.

  6. Equipment Handling

  7. Operate industrial kitchen equipment such as:

  8. Steam kettles, boilers
  9. Ovens and fryers
  10. Cutters, mixers, grinders
  11. Steamers, cookers, tilting pans
  12. Follow SOPs for equipment usage, cleaning, and maintenance.

  13. Quality & Food Safety Compliance

  14. Maintain high hygiene standards while handling food.

  15. Ensure all ingredients are within shelf life and stored as per FSSAI norms.
  16. Follow GMP, HACCP, and food safety guidelines.
  17. Strict adherence to:
  18. Personal hygiene
  19. Cross-contamination control
  20. Clean-as-you-go practices

  21. Documentation & Reporting

  22. Maintain daily production and batch preparation records.

  23. Record ingredient issuance and consumption in the batch sheet.
  24. Report any deviation in recipe, taste, ingredient quality, or equipment malfunction immediately to the supervisor.

  25. Coordination

  26. Work closely with R&D, Production, and QC/QA team for trial batches and new product development.

  27. Coordinate with the store department for timely material requisition.
  28. Ensure FIFO & FEFO while using raw materials.

Skills & Competencies Required:

  • Good knowledge of food preparation techniques.
  • Understanding of commercial kitchen operations.
  • Ability to follow recipes accurately and maintain taste consistency.
  • Basic literacy to read SOPs, recipe cards, and batch sheets.
  • Awareness of hygiene, sanitation, and safe handling of food.

Education & Experience:

  • 12th Pass / Diploma in Food Production / Hotel Management (preferred).
  • 1–5 years experience in:
  • Food manufacturing plant kitchen OR
  • Commercial kitchen (restaurant, hotel, cloud kitchen, catering)
  • Experience in Ready-to-Eat or Frozen Foods industry will be an advantage.
