Job Purpose:

The Chemist is responsible for conducting chemical analysis of raw materials, in-process samples, and finished food products to ensure compliance with food safety and regulatory standards (FSSAI, HACCP, ISO The role ensures product consistency, food safety, and adherence to quality parameters related to pH, moisture, salt %, brine %, and nutritional specifications.

Key Responsibilities:

  1. Chemical Testing & Analysis

  2. Conduct chemical analysis on:

  3. Raw materials (spices, vegetables, oil, dairy, grains)
  4. In-process samples (during mixing, cooking, and cooling stages)
  5. Finished products (Ready-to-Eat pouches, frozen snacks, curries, gravies)
  6. Perform routine chemical tests such as:
  7. pH, Moisture, TSS (Brix), Viscosity
  8. Salt %, Acidity %, Fat %, Protein %
  9. Additive/preservative testing (as applicable per formulation)
  10. Verify nutritional values as per product labeling requirements.

  1. Monitoring CCPs (Critical Control Points)

  2. Monitor and document CCP parameters:

  3. pH after cooking and before retort
  4. Temperature of cooking, cooling, and freezing
  5. Water quality and chemical parameters for wash/boil water

  1. Retort & Product Shelf Life Validation

  2. Support QC & Microbiology team in:

  3. Retort batch validation (pH verification before sealing)
  4. Shelf-life study for RTE and frozen products
  5. Sensory and stability testing at defined intervals

  1. Documentation & Compliance

  2. Maintain laboratory documentation:

  3. Test reports, COA (Certificate of Analysis), batch analysis report
  4. Instrument logs, calibration reports, and chemical consumption records
  5. ERP or QC software entries (if applicable)
  6. Ensure compliance with:
  7. FSSAI, HACCP, ISO, BRC, GMP, and internal audit documentation

  1. Lab Equipment Handling

  2. Operate and maintain laboratory equipment:

  3. pH meter, refractometer
  4. Moisture analyzer
  5. Digital/viscosity meter
  6. Weighing balances, hot plates, chemical glassware
  7. Perform calibration, preventive maintenance, and maintain equipment record logs.

  1. Coordination & Support

  2. Work closely with QC Incharge, Microbiologist, and Production team.

  3. Prepare COA for products before dispatch for export and domestic markets.
  4. Communicate non-conformities and corrective actions to production immediately.

Skills & Competencies Required:

  • Strong understanding of food chemical analysis, ingredient properties, and nutritional evaluation.
  • Analytical thinking and ability to interpret chemical test results.
  • Knowledge of food safety documentation and CCP monitoring.
  • Proficiency in laboratory worksheet documentation and reporting.

  • Bachelor's / Master's Degree in:
  • Chemistry / Food Chemistry / Food Technology / Biochemistry
  • 2–6 years of experience in QC chemical testing in:
  • Food processing / FMCG / Frozen Food / RTE plant / Dairy / Beverages
