Brief
As a R&D Chef – Patisserie & Sweets, you oversee all aspects of pastry and sweet production, menu creation, and team management within a professional kitchen. This role demands creativity, leadership, and deep expertise in pastry techniques and food safety standards.

Job Responsibilities
Premium Sweet Production & Efficiency:

  • Manage the daily preparation of all sweet items for exclusive store orders, strictly adhering to recipes, quality standards, and portion control optimized for online delivery.
  • Specialize in premium Indian sweets (e.g., Kaju Katli, Mysore Pak) and Bengali sweets (e.g., Rasgulla, Sandesh), with attention to transportability and presentation upon arrival.
  • Execute mise en place and workflow to ensure swift and efficient fulfilment of high-volume online orders.

Quality, Consistency & Go Desi Vision

  • Maintain a high standard of quality, focusing on developing and executing low-sweetness, high-flavour sweets that align with the brand vision.
  • Evaluate all products for taste, texture, and appearance, ensuring they meet premium guidelines even after transit.

Hygiene & Operations

  • Strictly adhere to FSSAI regulations, maintaining impeccable food safety, hygiene, and packaging hygiene standards for online operations.
  • Efficiently manage stock rotation and inventory to minimize wastage and maximize the use of available resources.

Collaboration & Presentation

  • Work seamlessly with the NPD, Chef de Partie, packaging, and exclusive stores team to ensure a smooth, end-to-end process from cooking to dispatch.
  • Focus on the aesthetic presentation of all sweets, ensuring they are visually appealing for online appeal and maintain their form during delivery.

Requirements
Experience
: 4-8 years as a R&D Chef / Kitchen Manager or Sous Chef, with a strong focus on Indian sweets, fusion sweets, pastry, or confectionery. Experience with cloud kitchen or exclusive outlet operations is an advantage.

Culinary Knowledge:
Solid knowledge of traditional sweet-making methods, especially Bengali sweets. Basic knowledge of fusion concepts and a keen interest in flavour experimentation.

Attributes:
High attention to detail, a creative mindset, strong teamwork skills, and the ability to work calmly and efficiently under pressure driven by order volumes.

Vision Alignment:
Must understand the Go Desi mission, vision, and target consumer palate, and prioritize initiatives that lead to repeat business.
