Job Description (JD):Role Overview:
The Commi 1 – Tandoor Chef is responsible for preparing, cooking, and presenting all tandoor dishes to the highest standard, maintaining quality, consistency, and hygiene at all times.
Key Responsibilities:
- Prepare and cook all tandoor items such as breads, kebabs, and tikkas as per standard recipes.
- Ensure the tandoor oven is maintained at the correct temperature and cleaned properly.
- Maintain mise-en-place for the section before service hours.
- Ensure consistency in taste, presentation, and portion control.
- Follow standard recipes and maintain food quality as per company standards.
- Check the freshness and quality of ingredients before use.
- Follow FIFO (First In, First Out) and maintain proper food storage.
- Ensure all kitchen equipment is used properly and maintained in good condition.
- Maintain hygiene and cleanliness as per FSSAI and company norms.
- Coordinate with other kitchen staff to ensure smooth operations during service hours.
- Assist CDP/DCDP in developing new tandoor menu items.
- Support in receiving and checking kitchen supplies when required.
- Adhere to safety, sanitation, and food handling procedures.

- Consistency in taste, texture, and appearance of all tandoor dishes.
- Timely Preparation:
- Ensure timely preparation and delivery of orders during peak hours.
- Hygiene & Cleanliness:
- Maintain kitchen and personal hygiene standards as per FSSAI norms.
- Inventory Control:
- Minimize food wastage and ensure proper storage of raw materials.
- Guest Satisfaction:
- Maintain positive feedback for tandoor dishes from guests and service staff.
- Team Coordination:
- Effective communication and teamwork with kitchen and service staff.
- Compliance & Safety:
- Adherence to all company policies, safety, and hygiene regulations.
