As the Asian Cuisine Specialty Sous Chef at Merlis Coimbatore, you will lead the culinary operations of our signature Pan Asian restaurant, delivering an authentic and memorable dining experience. You will be responsible for menu creation, kitchen management, and maintaining the highest culinary standards across a variety of Asian cuisines including Japanese, Thai, Chinese, and Korean. Working closely with the Executive Chef, you will combine creativity, precision, and leadership to ensure excellence in every dish served.
Merlis Coimbatore is an elegant new luxury hotel set amidst 4 acres of serene landscapes, ideally located just 2 kilometers from Coimbatore International Airport. The hotel features 142 meticulously designed rooms, five premium dining outlets, and an array of world-class facilities, including two grand ballrooms, a spacious banquet lawn, and six well-equipped meeting rooms. For relaxation and wellness, guests can enjoy a state-of-the-art health club featuring a spa, gym, and swimming pool. Duties and ResponsibilitiesMenu Development and Culinary Creativity
- Design and curate authentic Pan Asian menus that reflect quality, innovation, and cultural authenticity.
- Create signature dishes, seasonal specials, and tasting menus that showcase the diversity of Asian cuisine.
- Stay current with global culinary trends to introduce contemporary presentations and flavor profiles.
Kitchen Operations and Quality Control
- Supervise the day-to-day operations of the Asian restaurant kitchen, ensuring smooth workflow and timely service.
- Monitor preparation, cooking, and presentation to maintain consistency and excellence.
- Enforce hygiene, sanitation, and food safety standards as per HACCP and hotel guidelines.
- Manage kitchen organization, equipment maintenance, and food storage procedures.
Team Management and Training
- Lead, train, and mentor a team of chefs and kitchen staff specializing in Asian cuisines.
- Conduct regular training on techniques, plating, ingredient handling, and service timing.
- Promote teamwork, discipline, and efficiency within the kitchen brigade.
Procurement and Inventory Oversight
- Collaborate with the Purchase and Stores teams to source authentic Asian ingredients and premium supplies.
- Manage food cost control, waste minimization, and inventory rotation.
- Evaluate suppliers to ensure consistent quality and timely availability of ingredients.
Guest Experience and Collaboration
- Interact with guests for menu recommendations, feedback, and live demonstrations when appropriate.
- Partner with the F&B and Marketing teams to design themed dining events and culinary promotions.
- Uphold Merlis Coimbatore's commitment to providing exceptional, authentic Asian dining experiences.
Innovation and Continuous Improvement
- Experiment with modern cooking techniques and fusion concepts while preserving authenticity.
- Evaluate guest feedback to continuously refine dishes and presentation.
- Contribute creative ideas to position the restaurant as a top Pan Asian dining destination in Coimbatore.
