Job Summary
The Kitchen Supervisor is responsible for supervising daily kitchen operations, ensuring food quality, hygiene, staff coordination, and smooth workflow. The role requires strong leadership, knowledge of food safety, and the ability to manage a kitchen team effectively.
Key Responsibilities
- Supervise daily kitchen operations and ensure timely food preparation.
- Assign duties to cooks, helpers, and support staff.
- Ensure all food items are prepared as per standard recipes and quality guidelines.
- Check taste, portion size, presentation, and consistency of all dishes.
- Maintain high standards of hygiene, cleanliness, and sanitization in the kitchen.
- Ensure compliance with FSSAI and food safety standards.
- Monitor temperature logs, cleaning schedules, and checklists.
- Manage inventory of raw materials and kitchen supplies.
- Coordinate with the purchase department for stock requirement.
- Oversee receiving, storing, and issuing of materials.
- Train and guide staff on cooking processes and safety practices.
- Handle staff discipline, attendance, and shift allocations.
- Reduce food wastage and maintain cost control.
- Support menu planning and new dish trials when required.
- Resolve kitchen-related issues and provide timely updates to management.
Skills & Qualifications
- Proven experience as a Kitchen Supervisor or Senior Cook.
- Strong knowledge of cooking basics, kitchen operations, and food safety.
- Good communication and leadership skills.
- Ability to handle pressure and manage multiple tasks.
- Basic computer skills for reports and checklists.
- Certification in Food Safety (optional but preferred).
Education & Experience
- Minimum: Diploma in Hotel Management / Catering / Culinary Arts.
- Experience: 2–5 years in a hotel, restaurant, or centralised kitchen.
