Job Definition:

To coordinate and administer all job functions of the bar department.

Duties and Responsibilities:

• Responsible for the operations and management of all aspects and functions of all the bars in the outlet.
• Operates within the set budget of beverage cost'/'soft beverage cost'/'craft beer' cost.
• Directs, implements, and maintains bar service standards within the outlet, ensuring that customers are served promptly & courteously as per laid out guidelines.
• Co-ordinate with Social Media & PR Agencies and provide relevant information as and when requested.
• Additionally, oversee hygiene and safety regulations. Motivate & lead the bar & service team to work as part of the wider outlet team to promote a positive image of the outlet at all times.
• Formulates and maintains complete knowledge of and complies with all bar policies, service procedures, and standards.
• Maintain complete knowledge and strictly abide by Karnataka State Liquor regulations, particularly those prohibiting service to minors (below 21 years), prohibited substances, intoxicated persons, and drunk driving.
• Complete responsibility for the upkeep and daily update of the 'FLR' and 'CL-9' registers as per Excise rules.
• Inspect all aspects of the bar environment ensuring compliance with standards of cleanliness & order and direct respective personnel to rectify deficiencies immediately.
• Inspect quality and amounts of garnishes, ensuring agreement to departmental standards.
• Anticipate guests' needs, respond promptly, and acknowledge all guests, however busy and whatever time of day.
• Resolve guest complaints, ensuring guest satisfaction.
• Training of the Bar & Service team to keep them up-to-date with any additions in the menu and clarify any queries.
• Ensure that other bar and beverage-related formats and sheets are filled out and submitted in accordance.

• Prepare Weekly/Fortnightly/Monthly MIS related to beverage operations:

• Liquor, Soft Beverages & Craft Beer Cost Analysis

• Wastage/Spoilage Analysis

• NC Reports

• Tie-up and associations with beverage partners to optimize discounts/activations through these companies.

• Development and implementation of new trends to set expected standards within the industry.
• Implement and ensure the Company Health, Hygiene & Safety Policy is met at all times.
• Monitor and maintain cleanliness, sanitation, and organization of assigned work areas.
• Establish par levels for supplies, liquor, beers, wine, soft beverages, and equipment. Complete requisitions to replenish shortages or additional items needed for anticipated business.
• Responsibility for all beverage purchases, inventories, and stock levels within the operation.
• Regularly check storage areas (liquor room) for proper supplies, expired products, organization, and cleanliness.
• Review sales and beverage costs for previous day; resolve discrepancies with Accounting. Track actual against budget.
• Conduct pre-shift meetings with staff and review all information pertinent to the day's business.
• Inspect grooming and attire of staff; rectify any deficiencies.
• Inspect, plan, and ensure that all materials and equipment are in complete readiness for service; rectify deficiencies with respective personnel.
• Handle and report any guest issues to the management.
• Prepare weekly work schedules in accordance with staffing guidelines and business forecasts. Adjust schedules throughout the week to meet business demands.
• Ensure that staff report to work as scheduled. Document any late or absent employees.
