**Job Description: Chef de Partie (Indian & Continental)**
**Position**: Chef de Partie (CDP)
**Department**: Kitchen
**Location**: Mumbai
**Reports To**: Sous Chef / Head Chef
**Role Overview**
The Chef de Partie (CDP) will lead a specific section of the kitchen, specializing in Indian and/or Continental cuisines, to deliver high-quality dishes consistently. This role requires strong culinary skills, leadership capabilities, and the ability to train and supervise junior staff while ensuring smooth kitchen operations.
**Key Responsibilities**
- **Kitchen Operations**:
- Take charge of a designated kitchen section (e.g., appetizers, mains, or desserts) and ensure timely preparation of dishes.
- Supervise and guide Commis Chefs and kitchen assistants, maintaining smooth workflows.
- **Food Preparation & Cooking**:
- Prepare and cook dishes to the highest standards, focusing on Indian and Continental cuisines.
- Ensure consistency in flavor, portion size, and presentation across all dishes.
- Experiment with recipes to contribute to menu development.
- **Quality Assurance**:
- Monitor food quality and freshness, ensuring ingredients are used appropriately.
- Oversee portion control, garnishing, and plating to meet restaurant standards.
- **Hygiene & Compliance**:
- Enforce kitchen hygiene standards and comply with food safety regulations.
- Maintain cleanliness and organization in workstations and storage areas.
- **Inventory & Supplies**:
- Assist in managing stock levels for the assigned section.
- Coordinate with the procurement team to ensure timely availability of ingredients.
- **Team Collaboration**:
- Work closely with the Sous Chef and other CDPs to ensure seamless kitchen operations.
- Provide training and mentorship to junior kitchen staff, enhancing their culinary skills.
**Qualifications & Skills**
- **Education & Experience**:
- Diploma/Certificate in Culinary Arts or related field preferred.
- Minimum 3-5 years of kitchen experience, with at least 1 year as a CDP.
- **Technical Skills**:
- Expertise in Indian and/or Continental cuisines, including advanced cooking techniques.
- Proficiency in managing a kitchen section independently.
- Familiarity with kitchen equipment and tools.
- **Leadership Skills**:
- Ability to train and supervise junior staff effectively.
- Strong organizational and time-management skills.
- **Soft Skills**:
- Team player with excellent communication abilities.
- Calm under pressure, with problem-solving capabilities.
