Chinese Chef

A Chinese chef is a key role within a Chinese kitchen, responsible for overseeing a specific section or station in the kitchen. This position is part of a larger culinary team, and typically manages preparation, cooking, and presentation of dishes within their designated area.

Job Key Responsibilities:

- **Food Preparation and Cooking**:

- Responsible for the preparation and cooking of Chinese dishes, ensuring high-quality standards are met in terms of taste, presentation, and authenticity.
- Manage the assigned section (such as dim sum, stir-fry, noodle, or meat station) and oversee the daily production of ingredients and menu items.
- Follow recipes, techniques, and portioning standards specific to Chinese cuisine, including mastering traditional cooking methods like stir-frying, steaming, braising, and deep frying.
- **Supervising and Training Staff**:

- Supervise and mentor junior kitchen staff and apprentices in the assigned section.
- Ensure junior chefs adhere to cleanliness, safety standards, and correct cooking procedures.
- Assist in staff training and development, ensuring they understand the specific requirements for Chinese culinary techniques.
- **Inventory Management**:

- Help in managing inventory for your section, ensuring that all ingredients and supplies are stocked, fresh, and properly stored.
- Communicate with kitchen management regarding ingredient needs or any shortages.
- **Quality Control**:

- Ensure that every dish leaving the kitchen meets the restaurant’s standards for taste, appearance, and temperature.
- Monitor portion sizes and food wastage in line with restaurant policies.
- **Health and Safety Compliance**:

- Adhere to strict hygiene and safety regulations within the kitchen, including safe food handling, cleanliness, and the proper use of kitchen equipment.
- Ensure the kitchen environment complies with local health and safety laws.
- **Menu Development and Innovation**:

- Collaborate with the head chef and sous chefs in developing new dishes or seasonal menu items that incorporate modern twists while maintaining the integrity of traditional Chinese flavors.
- Experiment with ingredient pairings and techniques to enhance the menu offerings.
- **Communication**:

- Coordinate effectively with other sections of the kitchen and front-of-house teams to ensure smooth and timely service.
- Report any issues or concerns with kitchen operations to senior chefs.
- **Cleaning and Organization**:

- Maintain cleanliness and organization within your section of the kitchen, ensuring all equipment, tools, and workstations are cleaned and properly stored after each shift.

Required Skills and Qualifications:

- Proven experience in Chinese cuisine or in a similar position in a professional kitchen.
- In-depth knowledge of traditional Chinese cooking techniques and recipes.
- Ability to work in a fast-paced environment and maintain focus under pressure.
- Strong leadership skills to guide and motivate junior kitchen staff.
- Excellent knife skills and a deep understanding of various cooking methods.
- Knowledge of food safety and kitchen hygiene practices.
- Creativity and passion for Chinese food, with a willingness to experiment with flavors and techniques.
- Ability to work as part of a team and communicate effectively with colleagues and management.

Preferred Qualifications:

- Culinary degree or relevant certifications.
- Prior experience working in a high-volume Chinese restaurant.
- Fluent in Mandarin or Cantonese (depending on the restaurant’s focus) for ease of communication with the kitchen team.

Pay: ₹25,000.00 - ₹30,000.00 per month
