**Job Summary**:
The Chef de Partie (CDP) - South Indian Cuisine is responsible for preparing authentic and high-quality South Indian dishes, managing kitchen operations in the assigned section, and ensuring food consistency and hygiene standards. This role involves overseeing junior kitchen staff, maintaining inventory, and contributing to menu development.
**Key Responsibilities:1. Food Preparation & Cooking**
- Prepare and cook a variety of **traditional South Indian dishes** such as **dosa, idli, vada, sambar, rasam, chettinad curries, biryanis, and chutneys**.
- Ensure consistency in taste, presentation, and portioning of dishes.
- Follow standardized recipes while maintaining high food quality.
- Monitor and adjust cooking methods to meet guest preferences.
**2. Kitchen Operations & Supervision**
- Oversee food preparation in the South Indian section of the kitchen.
- Assist in training and supervising **commis chefs and junior cooks**.
- Ensure timely preparation and delivery of dishes during service hours.
- Maintain a clean, organized, and well-stocked workstation.
**3. Inventory & Stock Management**
- Monitor ingredient stock levels and ensure timely replenishment.
- Coordinate with the purchasing team for sourcing fresh **spices, vegetables, and meats**.
- Minimize food waste and optimize ingredient usage.
**4. Hygiene & Safety Compliance**
- Ensure adherence to **FSSAI, HACCP, and kitchen safety regulations**.
- Maintain cleanliness and proper sanitation in the kitchen area.
- Follow food storage and handling procedures to prevent contamination.
**5. Menu Development & Innovation**
- Assist in developing new **South Indian dishes** and seasonal menus.
- Experiment with traditional and modern techniques to enhance flavors.
- Provide feedback on customer preferences and menu improvements.
**Requirements**:
- Proven experience as a **CDP or Senior Commis Chef** specializing in **South Indian cuisine**.
- Strong knowledge of traditional South Indian spices, flavors, and cooking methods.
- Ability to work efficiently in a fast-paced kitchen environment.
- Excellent leadership, teamwork, and time management skills.
- Familiarity with kitchen equipment and food safety regulations.
**Education & Experience**:
- **Diploma/Degree** in Hotel Management, Culinary Arts, or a related field.
- **3-5 years** of experience in a professional kitchen, preferably in a South Indian restaurant or hotel.
Pay: ₹18,000.00 - ₹25,000.00 per month
