**Job Summary**:
The Tandoor Commis 1 is responsible for the preparation and cooking of authentic Indian tandoori dishes using traditional clay ovens (tandoors). This role involves managing mise-en-place, marination, and cooking under high heat while maintaining food quality, hygiene, and consistency.
**Key Responsibilities**:
- Prepare and cook tandoori dishes such as naan, roti, kulcha, tandoori chicken, paneer tikka, seekh kebabs, and fish tikka.
- Manage marination processes according to authentic Indian recipes.
- Operate, maintain, and control the temperature of the tandoor oven.
- Ensure all items are prepared and presented as per standard recipes and plating guidelines.
- Maintain cleanliness and hygiene in the tandoor section at all times.
- Ensure daily mise-en-place is completed before service.
- Handle and store ingredients and leftovers according to safety standards.
- Support senior chefs during busy hours and assist in prep for events or buffets.
- Minimize waste and maintain portion control.
- Follow food safety, hygiene, and HACCP standards strictly.
**Requirements**:
- Minimum 2-3 years of experience as a tandoor commis or cook in a professional kitchen.
- Hands-on experience operating traditional clay tandoor ovens.
- Strong understanding of Indian spices, marinades, and tandoori cooking techniques.
- Ability to work in a fast-paced environment and handle multiple orders.
- Good communication and teamwork skills.
- Physically fit and able to work in high heat conditions.
- Flexible to work in shifts, including weekends and holidays.
**Preferred Qualifications**:
- Certification in Food Production or Culinary Arts (preferred).
- Previous experience in hotels, banquets, or fine-dining Indian restaurants.
Pay: ₹20,000.00 - ₹22,000.00 per month
