**Position: Pastry and Bakery Sous Chef for a patisserie chain in Lower Parel, Mumbai Pastry and Bakery Sous Chef for a patisserie chain**
Qualifications Required**:Hotel management degree.**
Experience Required**:Minimum of 5 years of experience handling a team in Pastry with high volume food production, with good knowledge of different types of pastry, dessert, cake decorating.**
Other skills required: Well versed with Microsoft Office.
Job Responsibility:
- Responsible for overall production at Central Kitchen and ensuring products manufacture as per the standard and developing new recipes and menu design, and overall staff management and training.
- Key accountabilities are:
- Plan, implement and manage daily kitchen operations.
- Supervise and coordinate all pastry and dessert preparation and presentation.
- Monitor stocks for baking ingredients such as flour, sugar etc. and make appropriate orders within budget
- Work on recipes for new menus.
- Prepare goods on the organisation’s menu by strictly following recipes and SOPS.
- Ensure that all food preparation is in accordance with regulatory and health guidelines.
- Identify staffing needs and help recruit and train personnel
- Ensure excellent quality throughout the dessert offerings
- Coordinate with the sales & marketing teams for special & corporate orders and ensure their timely Execution.
- Investigate complaints with the help of the quality team and implement preventive action.
- Report all equipment problems and maintenance issues, known safety hazards, or unsafe practices and procedures to the supervisor immediately.
- Plan the team’s weekly roster and look closely at scheduling work.
- Guide and motivate the team to work more efficiently
- Document and maintain records of daily production, wastage, dispatch and inventory
