Liaises closely with the F&B Department on various operational and cost related issues to effectively control the F&B Cost.
*Controls the Food and Beverage outlets in terms of wastage, pilferage and efficiency.
*Prepares the costing for recipes and menus prepared by the Executive Chef and suggest the selling price.
*Prepares Banquet /ODC Profit & Loss and Event Based Costing Module (EBCM) for all banquet functions prior to the function.
*Sends weekly raw material consumption report to Executive chefs highlighting top 20 items consumed.
*Verifies bakery production sheet & monitors the consumption and sale of items.
*Clears POS - Point of Sale Consumption interface on a daily basis.
*Shares the Staff Food Consumption report on monthly basis and informs the HR manager for any abnormal cost.
*Creates items code in POS and updates the menu master and reconciles the items menu master with the physical menu card.
Maintains FL-3 register & files monthly excise returns.
*Co-ordinates with excise department for Hotel/ banquet function Liquor license.
*Sends various daily exception reports to F&B department & records their responses for the deviations.
*Conducts spot checks of the outlet by reconciling the opening stock with the closing stock, taking account of stores issues and sales.

**Salary**: ₹40,000.00 - ₹50,000.00 per month
