Job Title: Chef de Partie (Sr. CDP) - Corporate Catering
Job Summary:
The Chef de Partie ( CDP) is responsible for overseeing a specific section of the kitchen (e.g., North Indian kitchen, Bakery, etc.) in a high-volume corporate catering environment. The role ensures the efficient preparation, cooking, and presentation of high-quality dishes while maintaining strict hygiene and safety standards. The Sr. CDP also assists in training junior staff and maintaining kitchen discipline.
Key Responsibilities:
1. Food Preparation & Cooking:
Oversee and manage a designated kitchen section.
Ensure all dishes are prepared according to standardized recipes and presentation guidelines.
Maintain consistency in taste, quality, and portioning.
Assist in menu planning and development, suggesting improvements where necessary.
2. Kitchen Operations:
Supervise Commis Chefs and junior kitchen staff within the section.
Ensure smooth service during peak hours (e.g., corporate lunches, events, buffets).
Monitor stock levels, minimize waste, and assist in inventory management.
Follow FIFO (First In, First Out) principles for food storage.
3. Hygiene & Safety Compliance:
Adhere to HACCP, food safety, and sanitation regulations.
Ensure all workstations are clean and organized before, during, and after service.
Follow proper handling and storage procedures for raw and cooked food.
4. Team Leadership & Training:
Train and mentor junior chefs and Commis Chefs.
Foster a positive and collaborative kitchen environment.
Assist the Sous Chef in staff scheduling and performance evaluations.
5. Corporate Catering-Specific Duties:
Adapt to large-scale production while maintaining high standards.
Ensure timely delivery of meals.
Work efficiently under pressure to meet tight deadlines.
6. Documentation:
Maintain documentation related to procurement, inventory management, and kitchen operations in accordance with established procedures.
Ensure compliance with food safety regulations and quality standards, including record-keeping for temperature logs, sanitation procedures, and food storage practices.
Pay: ₹24,750.00 - ₹35,000.00 per month
